Kosmic Omelets
Inspired by the Kosmic Karma Pizza at Mellow Mushroom, I just had the most delicious omelet for breakfast (and I think it was even somewhat healthy!)
Ingredients
- 1 egg
- 1 egg white
- 2 TBL low-fat milk
- 1 tsp Sun-dried Tomato tapenade
- 1/4 cup fresh baby spinach
- 2 TBL crumbled feta
How to make it delish:
- Pre-heat 8 inch omelet pan to med-high
- Beat eggs, milk and SDT tapenade with a fork in a small bowl
- Pour egg mixture into pre-heated pan [NOTE: You won’t need little to no butter here. Tapenade’s, made primarily from olives, tend to be somewhat oily.]
- Using the tip of a large spatula, make crosses in the egg mixture until it starts to hardened [This probably won’t be more than 30 seconds]
- Let the egg patty cook. When you can lift the patty from the bottom without breaking it, add chopped spinach and crumbled feta [like you’re topping a pizza.]
- Turn one half of the omelet over the other and let cook for an additional minute on each side.

Tip
To cut the spinach into cute little ribbons that will cook up quickly in the omelet -
- Flatten 10 leaves on top of each other
- Roll them up lengthwise to the size of a crayon
- Cut 1/4 inch slices on an angle
- Then use your fingers to separate

Tip
Buy blocks of low-fat feta. They’ll save you money, flavor, and calories!
